This Snickers-filled snickerdoodle is rolled in pumpkin-spiced sugar for one tasty cookie.

3 Snickers Fun Size
¾ cup all-purpose flour
½ tsp baking soda
½ tsp cream of tartar
1 tbsp pumpkin spice, divided
¼ tsp salt
¼ cup unsalted butter, at room temperature
2/3 cup granulated sugar, divided
½ tsp vanilla extract
Preheat oven to 375°F. Cut each Snickers into quarters; set aside. Combine flour, baking soda, cream of tartar, ¼ tsp pumpkin spice, and salt; set aside.
Using electric mixer, beat butter with ½ cup sugar; beat in egg and vanilla until blended. Gradually add flour mixture; beat just until blended.
Divide dough into 12 portions and roll into balls. Press 1 Snickers piece into center of each ball. Reroll ball to enclose the Snickers completely.
In bowl, combine remaining sugar and pumpkin spice. Roll cookie balls in spiced sugar mixture. Transfer to parchment paper–lined baking sheet, spacing about 2 inches apart.
Bake for 8 to 10 minutes or until edges are golden. Let cool for 2 minutes in pan on rack; transfer cookies directly to rack. Let cool completely.
Tip: Top cookies with a dollop of cream cheese frosting and sprinkle with more chopped Snickers for an over-the-top treat.
